Durum wheat is part of the Gramineae plant family. This ancient grain was originally grown in an area between the Mediterranean, the Black Sea and the Caspian Sea.
It is high in proteins, gluten and dietary fiber. It also contains a considerable amount of carotenoids, lutein and beta-carotene, all of which are powerful anti-oxidants vital to prevent the aging of cells.
Durum wheat is milled to obtain the semolina used to make the pasta. A truly versatile grain which is perfect for combining with other ingredients.
